- Sulfite
Sulfites (also sulphites) are compounds that contain the sulfite
ion SO32−.tructure
The structure of the sulfite anion can be described with three equivalent
resonance structures . In each resonance structure, the sulfur atom is double-bonded to one oxygen atom with aformal charge of zero (neutral), and sulfur is singly bonded to the other two oxygen atoms, which each carry a formal charge of -1, together accounting for the -2 charge on the anion. There is also a non-bondedlone pair on the sulfur, so the structure predicted byVSEPR theory is trigonal pyramidal, as inammonia (NH3). In the hybrid resonance structure, the S-O bonds are equivalently ofbond order one and one-third.Commercial uses
Wine
Sulfites occur naturally in all
wine s to some extent.cite web|last= Zacharkiw |first= Bill, "Montreal Gazette" |title= Can't hold the sulphites |url= http://www.canada.com/montrealgazette/news/weekendlife/story.html?id=5a384231-28a6-4dd1-bcbc-f692baeaac1f |date= July 15, 2008 ] Sulfites are commonly introduced to arrestfermentation at a desired time, and may also be added to wine aspreservative s to prevent spoilage andoxidation at several stages of thewinemaking .In the US, wine bottled after mid-1987 must have a label stating that they contain sulfites if they contain more than 10 parts per million.Breton, Félicien: [http://www.frenchscout.com/organic-wines#sulfites Many organic wines contain sulfites] ]
In the EU an equivalent regulation came into force in November 2005. [cite web | publisher =

Sulfites are often used as
preservative s indried fruit s, and driedpotato products. Most
beer s no longer contain sulfites. Althoughshrimp is sometimes treated with sulfites on fishing vessels, the chemical may not appear on the label. In1986 , theFood and Drug Administration in theUnited States banned the addition of sulfites to all fresh fruit and vegetables which are usually eaten raw.Health risks
Sulfites are sometimes added to foods to act as enhancers or preservatives. They may come in various forms, such as:cite web | publisher =

The reaction can be fatal and requires immediate treatment at an emergency room, and can includesneezing , swelling of thethroat , andhives . Those who are allergic to sulfites are urged to avoid products that could contain them.Sulfites are also known to destroy vitamin B1 (thiamin), a vitamin essential for metabolism of carbohydrates and alcohol.
